Evaporation cools things down because of picky molecules.

*The quick version*:
Liquid water is a mix of fast + slow moving molecules. The fastest ones have enough energy to break free and become vapor. When they escape, they take their heat with them.

*What’s left behind*:
The slower, cooler molecules stay in the liquid. Less average energy = lower temperature. That’s why your skin feels cold after sweat dries.
