The enzyme invertase (sucrase,
saccharase) catalyzes the hydrolysis of
sucrose (a disaccharide) to invert
sugar. Invert sugar is a 50/50 mixture
of glucose and fructose—both
monosaccharides. Yeast cannot directly
metabolize (ferment) sucrose.the answer is glucose and fructose.
