its very simple just observe that all are very soluble in water except for greese.
the fact is the hydrogen bonds can beasily bond with hydrocarbons.. this is more like a chemistry question but i terms of surface tension the detergents weaken the tension by breaking the hydrogen bonds to form solutions but greeze can not do that
