I thought we were supposed to add 273 to the temperature

No need to add 273 to the temperature since it's the temperature difference. Temperature difference is the answer they got after substracting the two temperature

for example
initial temperature is 10°C
final temperature is 50°C

Change in temperature = 50-10=40
Difference is the answer you get after substraction
