The Valley of Eshcol was named so because of the cluster (eshcol) of grapes found there.
In Numbers 13:23-24, when Moses sent spies to explore Canaan, they came across a valley near Hebron and found a large, impressive cluster of grapes, which they carried back to Moses as a sample of the land's fertility. The place was then named the Valley of Eshcol (meaning "cluster" in Hebrew) because of this notable discovery.
