Glucose can be obtained from starch through a process called hydrolysis.
Starch is a carbohydrate made up of many glucose molecules linked together by glycosidic bonds, which form between the hydroxyl (-OH) groups of two adjacent glucose molecules. In order to extract glucose from starch, these glycosidic bonds need to be broken.
Hydrolysis is a chemical reaction that involves breaking a bond by adding water. In the case of starch, water molecules are added to the glycosidic bonds, causing them to break and release individual glucose molecules. This process can be facilitated by enzymes such as amylase, which is found in saliva and helps break down starch in our diet.
