Basically, hydroscopic materials take moisture out of the atmosphere surrounding them. Some will capture enough moisture to dissolve or dilute themselves. Phosphorus pentoxide (P2O5), calcium chloride (CaCl2), concentrated Sulfuric Acid (H2SO4) all are used as drying agents in chemistry labs. They must be kept in sealed containers to prevent them from using up their drying capacity on water vapor in the ambient atmosphere. Table salt, some spices, and sugar will all harden if they are allowed to absorb much water vapor from tthe kitchen atmosphere.
