(b) Procedure for the Preparation of Clear Soup (consomme); (i) Mix the minced beef, salt and egg white into the stock. (ii) Add chopped vegetables and bouquet garni (iii) Bring to boil and stir occasionally. (iv) Simmer gently/lower the heat for soup simmer. (v) Strain and skim/remove all fat.
