II - Pancreas: Secretes pancreatic lipase, the primary enzyme responsible for the chemical digestion of fats into fatty acids and glycerol.
III - Liver: Produces bile, a substance that emulsifies large fat globules into smaller droplets. This process increases the surface area of the fats, making it easier for enzymes to act on them.
While the gallbladder is involved in the process, it only stores and concentrates the bile produced by the liver; it does not secrete (produce) its own digestive substances.
