Epigeal germination is defined by the rapid elongation of the hypocotyl (the part of the embryonic axis below the cotyledons). This rapid growth pushes the cotyledons above the soil surface where they can eventually turn green and begin photosynthesis. This type of germination is common in plants such as beans, sunflower, and castor.
