Anaerobic fermentation is a metabolic process that breaks down glucose in the absence of oxygen. During this process, a single glucose molecule undergoes glycolysis, which results in a net gain of 2 ATP molecules. In organisms like yeast, the resulting pyruvate is further converted into ethanol (alcohol) and carbon dioxide to regenerate the NAD+ needed for glycolysis to continue.
