In this experimental setup, the level of liquid in the thistle funnel increases due to the process of osmosis. Osmosis is the movement of water molecules from a region of higher water concentration (the distilled water in the beaker) to a region of lower water concentration (the sugar solution in the funnel) through a semi-permeable membrane. As water molecules pass through the membrane into the funnel, the volume of the solution inside increases, causing the level to rise up the stem.
