reason is because the PH for optimum performance of ptyalin ranges between 6 to 7 which is almost or even neutral.the PH of an acid is lower than this making the 3-D structure of the enzyme to be denatured,hence decreasing its performance or activity

Simply put....ptyalin operates best in alkaline medium.....so the action of the gastric juice in the stomach which is acidic in nature,inhibits the ptyalin
